This is a medium extra virgin olive oil with lots of floral green fruit aromas. The pungency and bitterness are well balanced with more bitterness than pungency. The bitterness has a rounded element to it, which suggest it would be quite pleasing paired with medium bitter greens. The strong perfume is typical of the variety.

Medium robustness – Made from a blend of both green and ripe Ascolano olives, this oil emanates a wonderful aroma reminiscent of summer stone fruit followed by flavor notes of grass and butter with hints of pine and nuts.
About the Producer:
Rich and Diane Mathews are responsible for this award winning and tasty EVOO. During his college years, Rich spent his summers on a family dairy farm in the agricultural heartland of the Midwest. This led to a lifelong fascination with the plants, animals, and machines involved in food production. Moving to California instilled an appreciation for fresh, organic produce and sustainable management of resources. When given the opportunity to participate in the rebirth of the artisan olive oil industry in California, Rich jumped. He brings the same attentiveness, precision, detail and focus on quality to the olive oil business as he used in his first career as a semi-conductor designer (development and operations). Rich & Diane are committed to producing these fantastic oils and are now turning a 1940’s Dairy Barn into the MoonShadow Grove office and packaging site in Paso Robles, CA.
