A honey of intensity earthy aromas and in the mouth it has lots of intense tannic and bitter flavors which make it so beautiful when paired with strong mature and aged cheese. .
Color: Dark Walnut
Aroma: Intensely aromatic smell
Flavor: Very strong and persistent with lots of bitterness on rear of the tongue.
Uses: The preferred honey to match with aged and mature cheese either before or after dinner with a cheese plate of the highest flavor and intensity.
About the Producer:
Luca Finocchio is located in Tornareccio, the historic “capital of honey in the Abruzzo region”, with a 3 generation tradition of making single flower honeys from some of the cleanest plants and flowers in Italy. The family which has been in the beekeeping business for over 40 years and currently manages over 1000 hives. They are one of the most awarded producers of monofloral honey's in Italy. In Italy each monofloral must be tested to insure it is true to monofloral type in order to label any honey as being from a specific flower. If it is not judged to be true to aroma and flavor of that flower it may only be called a wild flower honey. Wildflower honey while delicious is very different from these difficult to create monoflorals which typically only the most skilled beekeepers can make!
