Cutting preserves are membrillo style purees that maintain their structure when you scoop it out of the jar. Rarely seen in the US, these types of preserves will add a distinct and different dynamic to your cheese plate. They tend to be relatively low in moisture and target one pure flavor of fruit. Quince is a relatively unknown fruit that some suggest was the forbidden fruit in the Garden of Eden. It is a pome fruit that shares a family with apples and pears. This preserve has a wonderful pure quince flavor that is not creamy, a little tart, and has some grittiness similar to pear.

Like a classic membrillo, but a tad softer for easy spreading, it’s excellent with aged manchego or any sheep’s milk cheese, cheddar, & parmigiano reggiano. Beautiful as a meat glaze. Don’t forget the serrano ham!
