This bar has a strong caramel taste coming from the caramelized coconut sugar. The salty flavoring balances the bar nicely and bursts with saltiness as you bite into kernels salt. It is wonderful velvety smooth bar.
Together with Big Tree Farms they support in Bali the preservation of traditional farmer through the development of social, ecological and economically sustainable cocoa is produced by the Sukrama family over 7 ha in the Melaya area in western part of the island. The chocolate holds a caramelized flavor resulting from the use of natural sugar produced from the juice of coconut blossom, harvested by gently slicing the flower. Once collected, the nectar is kettle-boiled into a thick caramel and ground to a fine crystal. This sugar has one of the lowest glycemic index (3 times less than cane sugar). Using it for chocolate is no only an innovation but also a great and healthy match for the Balinese fleur de sel.
