The chiles include only 4 ingredients: Roasted NM Green Chiles, lime juice, salt, and garlic. They have a strong pungent green pepper smell, with a nice firm texture. Because they are green, they have a slight amount of bitterness, but in a pleasant way. This goes fantastic on the interior of enchiladas, in a chile verde, or as a side with any of your favorite mexican dishes. To rate the heat of the spice, if a jalapeno was a 5, this rates at about a 2-3.
Just a small amount of lime juice lowers the Ph of the peppers, while a pinch of salt and dash garlic maintains and enlivens the flavor. Los Roast Green Chile is vegan and gluten-free. It comes packed with a healthy dose of heat and lots of Vitamin C.

All of their chiles are certified New Mexico grown, and they work directly with several New Mexico farmers in the southern counties bordering Mexico. During the harvest season, they use refrigerated to bring the chiles to Portland and will roast chiles to-order in front of markets and at farmers markets throughout the city.
