Our Notes: The oil is lovely with very aromatic aroma a tomato leaf and artichoke very evident in the first whiff of the oil, and back up with equally delicious flavors of artichoke and tomato when you taste the oil.  The bitterness is very restrained on the mild side of medium intensity and pungency is very on the strong side of medium with very nice length and persistence in the mouth.  It is a perfect oil for mild to medium bitter lettuce greens, caprese salads, bruschetta, and Sicilian style pesto with tomatoes.

Producer's Notes:
This oil is green and slightly veiled, with an intense scent of fruity fresh olives with a fragrance of tomatoes, green grass, and artichoke.  The taste reveals an aromatic richness with a perfect balance between the initial sweet notes and a defined bitterness which progresses towards the final spicy pungency notes. Recommended used with raw dishes in general including salad, vegetables, soups, and meats. 

This Oil is from Buccheri(SR) area of Sicily at 600m elevation, 100% Tonda Iblea hand picked from traditional style Grove in first week of October. It was pressed within 2 hours of picking and pressed cold in 2 phases to preserve tomato and artichoke aroma and flavor. Tonda Iblea is a very unique cultivar not only because it belongs to a very small territory in Sicily which makes it quite rare, but also because it's not just a seasoning but eaten by many in Italy for its health benefits including polyphenols and anti-oxidants.  It is one of the reason the oil is produced organic and pressed so soon after harvest to maximize these health and organoleptic properties.  

About the Producer:
This oil gets its name, Lavinia, from the mother of the 3 siblings that run the operations.  Le Case di Lavinia oil is produced in the small Sicilian town of Buccheri, situated on the Iblei Mountains, an ancient volcano.  With both fertile soil and an ideal climate, the unique Tonda Iblea cultivar thrives here.  The family emphasizes, the olives are hand picked in October and November, and then cold pressed to create wonderful organic olive oil.  Five generation of family have participated in the growing of olives and making of oil.  The family has a unique linkage to US, coming from Grandfather Gaetano who immigrated to Philadelphia to earn money building roads in America and later returning to families little town to buy the Vernera property and add to family olive oil business.
