This is a medium organic extra virgin olive oil. The bitterness and pungency are in equal strength. It has lots and lots of green tea and green olive flavors with a subtle taste of black pepper. Apollo is know for oils with high polyphenol and antioxidant counts. This year polyphenols are 429 mg/Kg and antioxidants are 559 mg/Kg

Sierra is harvested from decades old trees in the Sierra foothills planted in a granite bases soil.. The Apollo Olive Oil started in 1999 using 3 old growth olive orchards that benefit from their organic practices and focus on creating an excellent oil that was supremely healthy.
