Awards: International Chocolate Awards 2013 Silver Medal.
Piura Peru 67% has a crisp pop on the break and round vanilla aromas in the nose. In the mouth, we found strong flavors of citrus and nuts which are blended to give the chocolate zip and gravitas at the same time. This is amazing since the bar has only 2 ingredients: Chocolate and Sugar. The chocolate is lively and long lasting. The bitterness, pungency and sweetness is very subdued while the intensity is medium level which works so well for this creation because of the overall balance and complexity of the bar. I am surprised it only got a 2nd place in International competition since this is a totally delicious bar. This product is the result of a great source of beans and a masterful touch.
Ruby Grapefruit, Toasted Almonds, sun-dried wine grapes. One of the great joys of being craft chocolate makers is that every year we can work on many exciting limited-edition chocolate bars. This chocolate is one such delicacy. Enjoy the results of precise roasting, careful refining and the judicious use of only a handful of fine ingredients, but don't enjoy them too slowly, as this limited-edition bar won't be around for long!
