Our Notes:Notes of vanilla and nuts are dominate aroma of this chocolate, with bright citrus notes and mild bitterness from the very dark chocolate. It is for fans of really dark chocolate but don't want to go all the way to 100%. The cacoa is the main actor in this creation with only a touch of sweetness.
Producer's Notes: Floral aroma and flavors of fresh roasted nuts. Located near the coastal town of Muisne, Costa Esmeraldas is entirely owned and managed by the Salazar family. This single estate farm was established on reclaimed land and is planted with approximately 100 hectares of 5 year old Nacional hybrid cacoa. This bar is the result of a new fermentation and drying project from award winning cacoa expert Daniel O'Doherty of Cacoa Services. The flavor is surprisingly mild for such a high percentage bar.

David and Corey Menkes love good chocolate, and similar to coffee or wine, they want to share the subtle differences of each chocolate region. To that end, they source and roast cacao beans that are truly exceptional – not only in flavor, but featuring a truly ethical, sustainable supply chain. They travel to meet farmers in person at the source – Guatemala, Belize, Dominican Republic, and beyond. LetterPress believes that the quality of Cacao fruit is the future, and they have focused on a select group of farms that they truly believe in – not just buying cacao, but actually investing with them and taking an active role in cultivation. Sending equipment and expertise on site, their goal is to make the best chocolate in the world, in a fully sustainable and transparent way.
