A crisp snap, a beautiful cocoa brown color, the intricate Letterpress stamp all signals the presence of something special. Aroma of fresh roasted nuts and in the mouth juicy cocoa flavors early followed by strong flavors of fudge and bright acidity with long persistence. The tannin's are very mild and restrained. This is a wonderfully balanced chocolate with just the right amount of sweetness and tons of lovely aroma and flavors. A special chocolate worthy special consideration.
Hacienda Azul is a small farm located in the rural town of Turrialba in the province of Cartago a couple hours east of Costa Rica’s capital, San Jose. It is managed by the Zeuner family and employs 8 people full time. The famed CATIE university of agriculture is also located here and has provided 5 different clones to the farm. The beans are washed prior to drying and we’ve found this cacao fascinating by its versatility.
