Tuna Salad

1 1/2 cups canned tuna
1/2 cup celery, diced
3 tablespoons lemon juice
1/2 cup mayonnaise

Combine all ingredients in a bowl, except for endive, and mix.  You will likely need to flake the tuna into chunks, then break into smaller pieces.  Scoop the tuna mixture into a full leaf of endive.  

The bitterness from the olive oil mayonnaise and the endive combine for a delightful healthy and filling appetizer.
