Toasted Garlic Cauliflower Whip

1 head cauliflower, cut into florets
8 tablespoons delicate olive oil 
8 large cloves garlic, chopped
Sea Salt

Steam the cauliflower until tender, and drain. 

In a small pan, heat 4 tablespoons of oil over low heat and add the  chopped garlic.  Cook until soft, stirring often (about 11-12 minutes).  Make sure that it doesn't brown, otherwise the garlic will be bitter.

In a food processor add the cauliflower, the softened garlic with oil, the remaining 4 tablespoons of oil and blend until whipped.  Add salt and pepper to taste.
