4 large potatoes (or 1 per person, adjust ingredients accordingly)
10 cloves of Garlic, peeled and chopped
1/4 cup extra virgin olive oil
4 tablespoons of whipping cream
Boil water, add salt. Peel then chop the potatoes into even cubes. Add to the water and boil until a fork can easily stab into the potato. Once cooked, drain the water and mash the potatoes.
Saute the garlic in the olive oil at the lowest temperature, ensuring that the garlic doesn't burn (if the garlic browns, it will turn bitter). Once the garlic is soft to the fork, remove from the stove to cool. One cooled, and the garlic and oil to a blender along with cream and a dash of olive oil and salt to taste. Blend the mixture until smooth.
Combine the mashed potatoes and the garlic mixture to the potatoes and add cream as needed for desirable fluffiness and creaminess.
