Turkey Tacos (inspired by Andrew Garrett)

2 tablespoons olive oil
2 tablespoon mild hatch chiles powder
1 tablespoon cumin
1 teaspoon sea salt
1 teaspoon ground black pepper
1 onion, diced
1 pound of ground turkey
4 tablespoons cooking sauce
1 bunch of fresh cilantro, chopped (about 1 cup packed)
1 avocado, sliced
Cojita or Feta Cheese
1 Pack of corn tortillas
Hot Sauce, to taste

In a sauce pan, heat up the olive oil.  When the oil is hot, bloom dry spices for 30 seconds, stirring constantly.  Next add half of the onion and saute until it is translucent.  Add the turkey and stir.  Once the turkey is cooked through, remove from the heat and add 4 tablespoons of cooking sauce and mix.

As a topping for the tacos, make a cilantro salsa.  In a small bowl stir together the cilantro and other half of the onion.

Warm up the corn tortillas and serve the tacos with sliced avocado, some cheese and cilantro salsa.  For an additional kick, add hot sauce
